Every month we pick the best recipe to stay with the season. True to our model, all of our recipes do not have to do with food. Much like a great meal, relationships, career goals, organizational skills and everything in between uses steps, ingredients and a little bit of TLC to be special. August 2008 Food Recipe

In Texas, August brings us to the boiling point. I know for myself, I try not to cook and use the oven since it is just too hot! So in staying with the season, salads and cool soups are top on my menus! Read on for a great summer time salad too keep you cool! It is chock full of dark green leafy vegetables, good fats, vitamin C and nutrients to do the body GOOD!

Spinach Avocado Salad

ingredients:

5 cups of baby spinach washed and dried

1 ripe avocado

2 tbls spanish olive oil

tsp course sea salt

tsp course black pepper

juice of 1 lemon or lime

1/2 cup chopped cilantro

Drain the spinach and let dry. Cut avocado in half, remove the seed and score the insides to create dicing. Turn the avocado skin inside out to pop out the avocado pieces. Combine spinach, chopped cilantro, avocado, lemon juice, olive oil, salt and pepper and toss! Viola! Tasty and fast!
